Garden Green Artichoke Dip

Yield: 2 cups
Prep: 15 minutes
Bake: 25 minutes

Ingredients
2 cups spinach leaves, chopped (about 2 oz)
1 medium artichoke heart, steamed and chopped (about 1 cup)
1 cup grated Parmesan cheese
1/2 cup cream cheese, softened
1/3 cup sour cream
1/4 cup mayonnaise
3 Tbsp roasted red pepper, finely chopped
1 large garlic clove, minced (about 1 Tbsp)
1/4 tsp salt, optional
Toasted bread points or crackers

Directions

  1. Preheat oven to 350°F. 
  2. Combine the spinach, artichoke and cheese in a food processor.  Cover and pulse until smooth.
  3. In a large bowl, combine the next six ingredients until smooth.  Fold in spinach mixture until completely combined.
  4. Transfer to a greased 1-qt baking dish.  Bake, uncovered, for 25-30 minutes or until heated through.
  5. Serve warm with toasted bread points or crackers.
