Apple Stuffing with Sausage
Directions
Preheat oven to 375°F.
Line 12 jumbo muffin cups with foil liners.
In a large skillet, cook sausage according to package directions. Remove and thinly slice; set aside.
In same skillet, melt butter. Add the celery, onion, carrot, and garlic; cook over medium heat for 7 minutes. Stir in apples and Mrs. Wages® Apple Spice Mix and continue cooking for 2-3 minutes or until apples are tender. Transfer mixture to a large bowl.
Add the sausage, stuffing cubes, cranberries, sage, salt and pepper to apple mixture and toss to combine. Add chicken broth and eggs, tossing until stuffing cubes are moistened and mixture comes together.
Fill each muffin cup with 1 cup packed stuffing, pressing down to level off. Bake for 20-25 minutes or until golden brown. Let cool 5 minutes before serving.
