Pear and Apple Filled Crepes

Directions

1In a medium bowl, whisk the eggs, milk, water and oil until combined.  In a small bowl, combine flour and sugar; add to egg mixture.  Mix well.  Cover and refrigerate for 1 hour.

2For filling, combine the pears, apples, Mrs. Wages® Spiced Apple Mix, sugar and vanilla in a medium saucepan.  Cook and stir over medium heat for 10-12 minutes or until fruit is tender.

3Melt 1 tsp butter in an 8-in. nonstick skillet.  Pour 3 Tbsp batter into the center, tilting pan to evenly coat.  Cook until lightly browned and top appears dry; turn and cook until bottom is lightly brown, about 15-20 seconds.  Remove to wire racks.  Repeat with remaining batter, greasing with remaining butter as needed.

4Using a slotted spoon fill each crepe with about ¼ cup fruit filling; roll up jelly-roll style.  Place folded side down on plate; drizzle with sauce.

2 large eggs

1¼ cups whole milk

1/3 cup water

1/4 cup canola oil

1½ cups all-purpose flour

1/4 cup sugar

2 Tbsp butter

Filling

2½ cups thinly sliced peeled pears, about 4 medium pears

2½ cups thinly sliced peeled tart apples, about 2 medium apples

1 pouch (5.0 oz) Mrs. Wages® Spiced Apple Mix

1/2 cup sugar

1/4 tsp vanilla extract
