Wash and quarter apples or pears. Do not peel or core because the pectin in the peel is needed in this recipe.

Combine prepared apples or pears, apple cider vinegar, and water in a large, wide-bottomed pan. Bring to boil. Cover, reduce heat and simmer for30 to 40 minutes until apples or pears are soft. Stir mixture occasionally for even cooking.

Transfer fruit mixture to food mill and puree to separate seeds and peels. A colander or strainer may also be used to press the mixture through. Discard seeds and peels. Measure 5 quarts of pureed fruit mixture (20 cups) and return to saucepan. Stir in sugar and Mrs. Wages® Spiced Apple Mix until well combined. Cook mixture, uncovered, over medium heat, stirring frequently to prevent burning. Cook about 3 to 4 hours until mixture is thickened and smooth, and much of the moisture has evaporated.

Ladle hot mixture into prepared hot jars, leaving 1⁄4-inch headspace. Remove air bubbles, wipe rims, and adjust lids and rings. Process half-pints and pints for 15 minutes and quarts for 20 minutes in boiling water bath canner. Cool overnight. Test for airtight seal after 24 hours. If jars have not sealed, refrigerate and use within 2 weeks.
