Cuban Quesadillas
Directions
Season pork with salt and pepper. Place pork in a small slow cooker. Cover and cook on high for 3-4 hours or until pork is tender. Remove pork from slow cooker. Using two forks; shred pork. This should yield about 1 cup meat.
Coat a large skillet with cooking spray, and heat on medium high heat.
Place one tortilla on skillet. On one half of tortilla, layer 1 slice Swiss cheese, ham and roast beef. Top with about ¼ cup shredded pork, 4 pickles and 1 Tbsp mustard; fold over.
Cook for 1-2 minutes on each side or until tortilla is lightly browned and cheese is melted.
Repeat with remaining ingredients.
