Pear & Apple Filled Crepes
Directions
In a medium bowl, whisk the eggs, milk, water and oil until combined. In a small bowl, combine flour and sugar; add to egg mixture. Mix well. Cover and refrigerate for 1 hour.
For filling, combine the pears, apples, Mrs. Wages® Spiced Apple Mix, sugar and vanilla in a medium saucepan. Cook and stir over medium heat for 10-12 minutes or until fruit is tender.
Melt 1 tsp butter in an 8-in. nonstick skillet. Pour 3 Tbsp batter into the center, tilting pan to evenly coat. Cook until lightly browned and top appears dry; turn and cook until bottom is lightly brown, about 15-20 seconds. Remove to wire racks. Repeat with remaining batter, greasing with remaining butter as needed.
Using a slotted spoon fill each crepe with about ¼ cup fruit filling; roll up jelly-roll style. Place folded side down on plate; drizzle with sauce.
